The owner's goal is to serve "ramen as a special dish that appeals to the five senses"

Soup: "Soup cooked in a huge pot is made from thighbones and fatback of pork, adult chicken, and several kinds of vegetables. It is stewed for about ten hours to make it clear and extract umami slowly and thoroughly"
