Ezo-mae Soba and Pork Bowl Kitado
We deliberately call our restaurant "Ezo-mae" and serve soba noodles that make the most of Hokkaido ingredients. Hokkaido is a major producer of soba noodles, accounting for approximately 40% of the nation's total soba production. We use "Horokanai soba noodles," which are of particularly high quality among Hokkaido-grown buckwheat flour. We serve soba noodles made with distinctive ingredients from all over Hokkaido, such as "Shiretoko granules," "wild garlic," "scallops," and "mountain wasabi." Our signature dish, alongside soba noodles, is our famous pork bowl. We use "Akan pork," carefully selected for its delicious fat, and grill it until fragrant with our signature sauce.
